Holton W. Diamond worked throughout his career on uses of soybean oil in creating non-dairy foods such as whipped topping, coffee cream and ice cream. In 1943, he got his start as chief chemist at the George Washington Carver Laboratory in Dearborn, Michigan which was established by Henry Ford. During his work at the lab, he acquired the first two of six patents.
